Last week, to our great surprise, the man from the apple press said “Yes”!

This afternoon we are taking our apples over to his farm in order to convert two trailer loads into juice. We are delighted but a little bit apprehensive.

What will the juice taste like this year? Every year, there always seems to be a subtle but definitely present difference.

When the time comes to press our various types of apples into juice, the same question always pops up: will the balance between cooking apples, sweet apples and cider apples be the correct one?

I always worry that we don’t get the ratio quite right.
